A Dream of Salads

A Dream of Salads refers to the experience I had when I was ten years old. One night, I was sleep-walking and dreaming all the way down the stairs of the mission house in Manantantely, Madagascar. I remember finding myself, when I awoke, seated on the porch steps, the moonlight streaming down on me. My lap was full of watercress, springing from a white, enamel bowl.

My hand was tangled in the green, tiny-leaved plants floating in cool water. I must have been dreaming about Rapunzel's mother, her daughter growing inside her, craving for her own salad the tangy greens called rampion. Those leaves of green that soon would be harvested by the sorceress on the other side of the castle wall.

My own mother must have left that basin on the porch that night, intending it for the next evening meal--a salad, perhaps, or another enticing dish. Ever since that night's wandering, I have loved to look at, make, and eat salads. Especially green salads. I hope to share favorite recipes for salads here, and I hope you will do the same.
